Pinning a form puts it on your admin dashboard so you can reach it without going to the Forms page each time.
Pinning is personal to your own admin profile. Nothing you pin or unpin changes what any other admin sees, so you can shape your dashboard around the work you actually do.

Unpinning only removes it from your dashboard view. The form itself, its settings and every submission it has collected are untouched.
Forms you check often rather than forms that matter in principle. In practice that usually means your live application form during a recruitment push, and whatever form is currently collecting something you are waiting on.
